WRE: Tell us about Piegari, its history and concept.

Laura Chinkies: Piegari Ristorante was born 30 years ago in Argentina. In March 1994 we first opened our doors in our first location in Buenos Aires. Over the past 30 years, we have become an international gastronomic icon. Piegari has been chosen by presidents from all over the world, businessmen, and renowned musicians such as Luis Miguel, Manzanero, Sting, Selena Gomez, The Weekend, Joan Manuel Serrat, La Rosalia, and even the Rolling Stones. It has become a symbol of Argentine gastronomy and has been a Country Brand restaurant since 1994, representing gastronomic quality on a global scale. We are a traditional Italian restaurant, where you can enjoy great food and excellent service.

We pride ourselves on our staff. We build teams that enjoy working in the restaurant. Food is family and friends and when you cook with love you can taste the difference.

WRE: Why did you decide to open in Wynwood?

Daniela Chinkies: We decided to open our first location in an upcoming neighborhood surrounded by art and culture and hip restaurants.

WRE: What are some of Piegari’s signature dishes?

DC: One of our most popular dishes is the Fettuccine al Nero di Seppia, homemade black Fettuccine made with squid ink tossed in a garlic cream sauce topped with shrimp and red caviar. Another of our most popular dishes is the Chorde di Chitarra alla Carrettiera, in Argentina we trademarked this dish. The homemade thin pasta is made with a special sobadora imported from Argentina made specially for Piegari under special supervision. This machine allows us to deliver a very thin dough that is cut as guitar strings and after being cooked just for seconds this delicate pasta is tossed with our Pomodoro, which is only made with fresh tomatoes. This dish is just pasta, Pomodoro, basil, and black olives, but the freshness and delicate process of each ingredient makes this a masterpiece.

WRE: Piegari is a family business, how is it working with each other day to day?

LC: Piegari is a family business and we enjoyed working together very much, it is a way for us to keep connected and in each other’s daily lives. At the end of the day no job is easy but having your family involved guarantees that we all want the best for the company and we work hard so our brand grows and becomes more successful every day. We have a commitment to each other and to the brand.

WRE: What should guests expect when they come to Piegari?

LC: Guests should expect great food and service in a very relaxing and sophisticated atmosphere. We pride ourselves on offering amazing homemade pasta dishes, a very curated and delicious menu, a large variety of signature drinks, and fine dining-level service. When you come to Piegari our wish is that you enjoy your food and the attention of our staff.

WRE: You have a very experienced staff, why is that important for the brand?

DC: We pride ourselves on our staff. We build teams that enjoy working in the restaurant. Food is family and friends and when you cook with love you can taste the difference. We value our staff having a passion for their work, as it shows in their service. They should love serving customers, and we prefer to have a stable team to get to know our clients, and their preferences, and surprise them with personalized details. This can only be achieved with people who have a passion for gastronomy, a quality that is essential for us.
