WRE: What was the inspiration behind opening Natura Eatery?

Nicolas Clichy Coeur de Roy: I wanted to create and build a new healthy food restaurant concept and franchise it. As an already very saturated restaurant concept, I really wanted to make Natura Eatery stand out amongst the rest. By incorporating French and Spanish Mediterranean cuisine we combine delicious flavors and cultures adding uniqueness to our food.

WRE: What are some of the most popular menu items? 

NCCDR: The avocado toast, protein coconut waffle, Tropical catch bowl with roasted salmon, cauliflower pizza, Pear ‘n dive salad, tropical smoothie, and chia seed watermelon juice to name a few.

WRE: Why is the menu centered around French & Spanish Mediterranean cuisine? 

NCCDR: I’m originally from France and lived in Spain for many years. Experiencing those cultures and the delicious food that came with it invited the idea to combine them and create a concept around the combination of the two.

What can guests expect from Natura Eatery?

NCCDR: Healthy and always fresh food with organic products, gluten-free options along with vegan and vegetarian items. We offer all-day breakfast, lunch, & dinner options as well as catering services.

WRE: How did you decide on the location of the restaurant?

NCCDR: I was looking for a booming location. The art and entertainment district is expanding and continues to grow. I thought this would be a good place to start.

WRE: Are there plans to expand to other locations? If so, where to next?

NCCDR: Yes, I want to open more locations: I am looking at possibilities in Sobe, Brickell, Coconut Grove, and West Palm Beach. The plan is to focus on Florida first, then who knows maybe other states or other countries.
