Miami, FL – May 18, 2023 – Poised above the city atop globally renowned nightclub E11even is an elevated dining experience set in a dazzling, panoramic setting to fit the lively city below.
In a carefully curated environment of luxurious marble and tabletop preparations of dramatic proportions, the restaurant offers a unique blend of Asian, Mediterranean, and French-inspired cuisine provides a diverse range of dishes to fit every palate. With an in-house mixologist curating a sophisticated yet playful menu, the indulgent ambiance is rounded out by delightful drinks bursting with delicious flavors. Offering flaming wagyu tomahawk prepared table-side and truffle adorned dishes, the menu is as eccentric as the environment.
WRE: Tim and Alan, how did the two of you meet, and what made you decide to partner on this project?
Alan Roth: Susan Penrod (who handles publicity for TRP) introduced us about 3 years back. At first we connected just as friends. About a year later I text Tim early in the morning one day and said, “If I want to open a place in Miami you want to partner up?” Coincidentally Tim was working on a project in Brickell that he brought me into (Which became Rosa Sky) and as the stars were aligned, the rooftop of E11EVEN Miami fell into our lap a few months later.
WRE: What inspired you to create Giselle, and how did you come up with the concept for this elevated dining experience in downtown Miami?
AR: We knew we wanted to create something unique to Miami. We also believed since we were opening a restaurant on the roof of E11even it had to be able to stand alone from downstairs but also create the perfect synergy between the two places. We were inspired by the sexiness of E11EVEN and Miami; our goal was to make guests feel they have escaped to their favorite global city.
WRE: Can you describe the type of atmosphere and dining experience that guests can expect when they visit Giselle, and what sets it apart from other restaurants in the area?
Tim Petrillo: The atmosphere should feel alive and sexy. Each guest should feel like a vip. Service is one of the most important elements, which hopefully sets us apart. Music and vibe is also important to us, these elements should give our audience a new energy compared to other spots.
WRE: How did you approach the design process, and what inspired you to create such a stunning setting for your restaurant?
TP: We brought in a brilliant young designer from South Africa. He took lead but as a team we worked on every design element making changes to create the final product. The design has many different inspirations. The dream room is inspired by lace. The main room is meant to keep guests constantly engaged with all the detail.

WRE: Giselle offers a unique blend of Asian, Mediterranean, and French-inspired cuisine. How did you decide on this fusion of flavors and culinary traditions, and what are some of your favorite dishes on the menu?
TP: From the beginning we always wanted a menu which could serve a variety of people. Make a group of 10 who all eat differently feel right at home. The menu was meant to feel accessible and comfortable but also unique and elevated. I love the Tuna Truffle Cones, Toro & Caviar Crispy Rice, Maine Lobster Fra Diavolo and for meat lovers the Wagyu Tomahawk is a winner.

WRE: Can you talk about the cocktail program at Giselle and how it complements the dining experience? What are some of the signature cocktails that guests can try, and what makes them stand out?
AR: Our in-house mixologist worked for months on the menu. We wanted the menu to feel sophisticated but also playful. Take for instance the Head Over Heels, which is served in a glass high heel shoe. It’s definitely sexy and playful but the recipe and taste of the cocktail is also bursting with delicious flavors.
