Bagale is renowned worldwide for his expertise in molecular gastronomy and artistic dishes. Martinez, known for his Michelin-starred Lima London and Lima-based restaurant Central, which boasts a three-year reign at the top of The World’s 50 Best Restaurants list in Latin America, is one of the leading figures advancing the popularity of Peruvian cuisine worldwide. A native of Brittany in France, Executive Chef Anthony Le Pape welcomed Chefs Bagale and Martínez to the kitchen at Fuego y Mar at The Ritz-Carlton, South Beach for an ecstatic intimate dinner experience that exposed guests’ taste buds to a kaleidoscope of flavors and textures, complemented by wine from the Southern Glazer’s Wine & Spirits portfolio.
