Miami, FL – March 12, 2025 – Maple & Ash, the famed, top-grossing restaurant from Chicago’s Gold Coast, is set to open its largest location tomorrow at Miami Worldcenter. Spanning 22,000 square feet across two stories, the restaurant offers multiple dining spaces designed by longtime Maple Hospitality Group interior design firm Studio K, including The Atrium, which features an upside-down palm tree adorned with 10,000 crystal beads.
Known for its playful yet upscale atmosphere, Maple & Ash blends seamlessly with Miami’s vibrant dining scene, bringing not only high-quality steaks but also an array of wood-fired dishes and an extravagant “I Don’t Give a F@k” tasting menu for adventurous diners.

While steaks remain a highlight, Maple & Ash also serves standout seafood, handmade pastas, and Miami-exclusive dishes like hamachi crudo and Dover sole. “The Fire-Roasted Seafood Tower, a bold reimagining of the traditional seafood display, features hearth-roasted shellfish finished with a tantalizing mix of garlic butter and chili oil,” Chef Grant continues.

WRE: Tell us about the concept behind Maple & Ash.
Chef Partner Danny Grant: Maple & Ash is all about redefining the classic steakhouse with a blend of sophistication, creativity, and a bit of the unexpected. While we stay true to our signature style and core menu, every location embraces the unique spirit of its city.

WRE: Why did you choose Miami and Worldcenter as your third location of Maple & Ash?
DG: Miami has evolved into one of the most dynamic culinary destinations in the country, making it the perfect home for Maple & Ash’s next chapter. How it has evolved in the past decade is something I admired and wanted to be a part of.
WRE: What are some of the signature dishes? Signature cocktails?
DG: The menu seamlessly marries elevated classics with locally inspired creations, offering something for every palate. Standout experiences include the “I Don’t Give a F*@k” tasting menu, which invites guests to surrender to the chef’s imagination, and the Fire-Roasted Seafood Tower, a bold reimagining of the traditional seafood display, where hearth-roasted shellfish are finished with a tantalizing mix of garlic butter and chili oil. For meat lovers, the Wagyu Experience features premium Kobe beef sourced directly from Japanese auctions. The Ricotta Agnolotti, affectionately known as “Pillows of Love,” delights with its decadent, melt-in-your-mouth perfection. For the grand finale, try the Sundae Service, a playful and extravagant take on a childhood favorite guaranteed to leave a lasting impression. Signature cocktails include the IDGAF Old Fashioned (Glenfiddich 21yr, pedro ximenez, and maple reduction, amaro, chocolate truffle bitters, 24k gold), the Wild Jorge (Patrón Silver, aloe, kumquat aperitif, coconut, lime, habanero bitters), and the famous Espresso Martini tower.
WRE: What should guests expect and experience when going to the restaurant?
DG: Guests can expect an experience that’s grand, immersive, and full of surprises at Maple & Ash Miami—our most ambitious location yet. This outpost takes everything people love about Maple & Ash and evolves it even more, creating an atmosphere that is bigger, bolder, and unlike anything else. Each space within the restaurant has its own unique energy, offering guests a dynamic and ever-evolving experience. Exclusive to Miami, intimate “nooks” create one-of-a-kind, personalized experiences. Bar Bocuse invites guests into a cozy yet sophisticated setting to indulge in champagne, caviar, and Jamón Ibérico. At the same time, Petit Bocuse offers an interactive dining adventure, where guests can engage with chefs over rare cuts and unexpected culinary delights.
WRE: Are there any dishes unique to Miami?
DG: There certainly are! Some of the dishes unique to Miami are the Veal Sweetbreads, Dry-aged Duck Breast, Lobster Bisque Dumplings, Lobster Spaghetti, Soufflé, and the Orange Dreamsicle.
WRE: Maple & Ash is not your “father’s” steak house. What is the philosophy behind this?
DG: I love this question. I was so tired of going to steakhouses and ordering a steak with a large whole head of broccoli as a side and a seafood tower if we were feeling special. I wanted to take the foundation of a steakhouse, turn it on its head, and add some flair to what was being offered. We take the classics and curate something memorable out of the dining experience that is more than just the stereotypical steakhouse items – you can see this first-hand on our menu with items like the Fire-Roasted Seafood Tower, a bold take on the traditional cold seafood display.
WRE: We love the design. Who did the interior, and what is the motivation?
DG: Thank you! Studio K is our longtime Maple Hospitality Group interior design firm. The Maple & Ash Miami location was designed as a tribute to the city’s lively energy and nostalgic charm. Inspired by 1970s Miami glamour and Art Deco influences, the interiors feature playful yet sophisticated details. With bold colors, luxurious materials, and carefully curated textures, the space transforms every visit into a celebration.
WRE: What else do you have in store for Miami? Any other concepts planned?
DG: We’re always planning and strategizing for what’s next. For Miami specifically, we will be opening Eight Bar, our other beloved Chicago concept, later this year on the first floor of Maple & Ash.
