Miami, FL – February 7, 2025 – Jeremy Ford is bringing his Michelin-starred Miami Beach restaurant, Stubborn Seed, to the Las Vegas Strip—offering an artful, modernist tasting menu with a South Beach vibe.

Opening February 10 at Resorts World Las Vegas, Stubborn Seed will showcase Ford’s signature vegetable-forward dishes, infused with Japanese flavors and precise, artistic plating.

The 130-seat space, designed with Art Deco flair, features an open kitchen and striking mural inspired by Hokusai’s The Great Wave off Kanagawa. Ford, a Top Chef winner and James Beard nominee, has tapped local talent like chef Ricky McCormick to help shape the Vegas iteration, where an eight-course tasting menu starts at $135.

Expect intricate plates like dry-aged duck with beets, truffle ricotta gnudi, and yellowtail with passionfruit buttermilk emulsion, alongside a standout cocktail program featuring drinks like the gin-based Kill Dill.
