Miami, FL – October 17, 2023 – As the temperatures dip, Miami gets ready to welcome the Fall — and Margot’s got a new menu to celebrate.  Inspired by travels through Scandinavian landscapes and meeting female wine makers through Europe, Margot Natural Wine Bar embraces the feminine endeavor — from the wine producers to the art selection. Helmed by Bar Lab’s Elav Zvi and Gabe Orta alongside Chef Hedy Goldsmith, Margot offers over 100 different selections of wines from around the globe. “We created a savory sharing menu that works in harmony with organic wines to be fresh, light, and clean,” shares the group about their Fall menu. “We‘re engaging every inch of the palate — sweet, salty, sour, bitter and umami — while also allowing the ingredients to speak for themselves.”

WRE: Can you describe the ambiance and design of Margot Natural Wine Bar?

Margot Natural Wine Bar: Margot was inspired by our travels through Scandinavian landscapes and meeting female wine makers through Europe. It embraces the feminine endeavor — from the wine producers to the art selection. Danya Hachey of MaD Artistic, who has served as Bar Lab’s creative director since the original Broken Shaker pop-up in 2012, headed the original design of Margot and will be rolling out additional updated touches in the weeks to come. Danya opted to uncover and feature as much of the historical building’s original details as possible, incorporating them into her 70’s Scandinavian meets 80’s Italian design.

WRE: Can you tell us more about the inspiration behind the vibrant new menu at Margot Natural Wine Bar? 

MNWB: We wanted to take our menu to another level, introduce different layers of flavors while at same time keeping it light and tasteful. We created a savory sharing menu that works in harmony with organic wines to be fresh, light, and clean. We‘re engaging every inch of the palate — sweet, salty, sour, bitter and umami — while also allowing the ingredients to speak for themselves.

WRE: What can guests expect from the new tapas-style menu created by Chef Hedy Goldsmith?

MNWB: It’s very bright, both visually and for the tastebuds. The dishes are perfect to pair with wine, share amongst guests or truly indulge in if you’re joining us for dinner.

WRE: What motivated the collaboration between Margot and Bar Lab partners Elad Zvi and Gabe Orta, as well as Chef Hedy Goldsmith?

MNWB: We’ve been following Chef Hedy’s career for a long time, and have always been a fan of her simple, tasty approach to food. We have a lot of respect for her and a true friendship, so when we spoke about the concept and the direction we were hoping to go in, all felt right. As an acclaimed pastry chef, she really leaned into her savory palate to help create the perfect sharing menu for us.

WRE: What’s Next for Margot Natural Wine Bar? What can Miami (and/or other cities) expect from you guys?

MNWB: We have our eyes set on expanding Margot into other cites. Our wine club has also been such a hit that we want to take that platform nationwide.

WRE: Tell us about the extensive natural wine list. Where are they sourced from? 

MNWB: We offer over 100 different variations of wines from different parts of the world. Since we only carry natural biodynamic wines small in production, our list is constantly changing and evolving. Right now we are really loving all the wines coming from Croatia, Northern Italy and the Yuco Valley.

WRE: How did you decide on Downtown Miami as the location for Margot Natural Wine Bar? 

MNWB: Downtown is one of the most up and coming neighborhoods, with lots of great food and beverage spots within walking distance. It’s a vibrant neighborhood that continues to solidify itself as a nightlife hotspot, date night spot, and go to for happy hours, late night outings and leisurely lunches. We have Jolene Sound Room next door, so we’re especially Invested in the continued growth of the neighborhood.
