Flay’s ever-evolving culinary panache includes his recently opened seafood-focused concept Shark at Palms Casino Resort in Las Vegas, NV. His first original new restaurant concept in five years, Shark’s menu is influenced by ingredients from South America, Mexico and the Mediterranean and is the first of Flay’s vast empire to feature sushi and raw bar offerings.
