Nice born Chef Frederick Bouldron has a knack for perfectly executing his dishes. Starting his career in the kitchens of France’s top Michelin rated restaurants including L’Ane Rouge and Le Bristol, Bouldron has most recently served as Chef de Cuisine in some of Miami’s most bustling kitchens including Tosca, Villa Mayfair, La Goulue and Vita. Bouldron makes sure to accommodate Collette’s menu with the freshest ingredients that are in season. What are some of the must-try items on the menu? Chef Bouldron says, “We make our foie gras in house, and it’s a must. We’ve also become famous for our Moules Marinieres, and they are truly the best mussels you will taste in Miami.” The French bistro fare also boasts savory items such as steak au poivre, French onion soup, and of course, Colette’s signature cajun chicken. The Bistro features an extensive list of French wines to pair with your meal that will not only tantalize your palette, but your wallet as well. A perfect addition to the ambiance is the keen choice of music. From Serge Gainsbourg to Amy Winehouse, and everything in between, the eclectic soundtrack will keep you guessing and wanting more, as will the pizzas you will unexpectedly find on the menu.
